Hi! This is Chaos Cookin‘, a collection of recipes that sums up my approach in the kitchen.
Think of this as cooking with wiggle room: measurements are flexible (if they exist at all), and perfection is never the goal. No step-by-step photos quite yet (please bear with me while I figure out how to make everything camera ready).
Each recipe is more of a base to build on, which gives you the freedom to tweak, swap, or modify however you wish.
As always, I’ll skip the small talk and get straight into the muffins:
Ingredients
Dry
- 1/2 cup sugar
- 1/2 cup flour
- 2 tsp baking powder
- 1/2 tsp salt
Wet
- 1 egg
- 1/2 cup milk
- 1 tsp vanilla extract
- 1/4 cup vegetable oil
Optional Add-ins
- berries (blueberries, raspberries, strawberries, etc.)
- chocolate chips
- peanut butter
- brown sugar (to sprinkle on top like a crumble)
- nuts
- spices (cinnamon, all spice, etc.)
- savory and spicy (jalapeno slices, shredded cheese, bacon, etc.)
Steps
- Preheat your oven to 400°F
- Mix dry ingredients together in a large bowl
- Mix wet ingredients together in a separate bowl
- Slowly add the wet ingredient mixture to the dry ingredient mixture and mix everything together
- Add any toppings that you would like. If you’re doing multiple, wait until after scooping into muffin tray
- Fill each muffin tin about 2/3 full with the mixture
- Bake for 18-20 minutes
And that’s all there is to it! A super simple and adaptable muffin base that works for picky toddlers just as well as it does for adults.
