When it’s 5 am and my kids are ready to go while I’m still trying to figure out why I’m wearing my pants backwards, breakfast is the last thing I want to devote a lot of time to. I need something quick and efficient; something I can make on auto-pilot while my coffee brews . This is one of those recipes. These banana protein pancakes are my go-to on those haphazard mornings when I want something nutritious, filling, and versatile enough to throw the wonky ones at my vacuum of a dog.

The best part? They’re made with real, simple ingredients, come together in minutes, and you can easily tweak them depending on who’s eating. Think: mini chocolate chips for the little ones, extra cinnamon for the grown-ups, and a protein-powder-free version for our four-legged friends.
Ingredients
- 2 ripe bananas
- 1–2 eggs (I usually go with 1 for a softer texture)
- 3 scoops vanilla protein powder*
- 1/4 cup flour
* If you’re serving these to babies, toddlers, or your pup, feel free to skip the protein powder and replace it with more flour for a gentler option.
Optional Add-ins
- berries (blueberries, raspberries, strawberries, etc.)
- chocolate chips
- peanut butter
- nuts
- spices (cinnamon, all spice, etc.)
Steps
- Mash the bananas in a mixing bowl until mostly smooth (just do your best).
- Add the egg(s) and mix until combined.
- Stir in your spices. Cinnamon and allspice were great introductions for baby led weaning.
- Mix in the protein powder and flour, adjusting the consistency if needed (you’re aiming for that pourable, pancake-y batter).
- Fold in any fun toppings or leave it plain
- Heat your pan on low-medium. I love using cast iron for that golden edge.
- Melt a bit of butter and coat the pan evenly. Make sure it doesn’t get too hot. You want a sizzle, not smoke, and certainly not the screaming smoke detector.
- Scoop the batter onto the pan. I like to cover with a lid and wait until bubbles form and pop before flipping.
That’s it. Warm, fluffy pancakes that aren’t overly of sweet. Bonus: you can simultaneously make maple breakfast sausages or bacon and your home will smell like a southern diner!
